Krispie Treats

These Strawberry Rice Krispie Treats will brighten up any day!

When sunshine isn’t guaranteed, we turn to sweet treats to bring the brightness indoors. In my home, gray skies call for pink treats —like these Strawberry Rice Krispie Treats! With just a few ingredients and a pop of berry goodness, you’ll turn gloomy afternoons into sweet, chewy celebrations.


Ingredients

A box of Kellogg's Rice Krispies cereal, a bowl of mini marshmallows, a bowl of dried strawberries, a small bowl of vanilla extract, and a wooden measuring spoon a white marble surface.
  • 6 C Rice Krispie cereal (plain)

  • 10 oz Bag of mini marshmallows (~ 7 cups)

  • 5 Tbsp butter

  • 1 Tsp of vanilla extract

  • 1/4 tsp salt

  • 1.5 C Freeze-dried Strawberries

Instructions

  1. Line a baking dish with parchment paper.

  2. Add your butter to a large pot and set over medium-high heat. Allow butter to lightly brown (~2-3 minutes)

  3. While your butter is melting grab a plastic bag and toss in your freeze-dried strawberries. Grab a meat tenderizer or a rolling pin and go to town. Release some stress and break apart the strawberries by “hammering” down on them. We should be left with strawberry dust. If yours has a little more texture to it, no worries!

  4. Remove from the heat and stir in the marshmallows until melted. Then toss in the vanilla extract and salt.

  5. In a large mixing bowl toss in your Rice Krispie cereal and then carefully pour in your marshmallow mixture. Use a rubber spatula to fold and combine the ingredients. (Pro tip spray it with a little oil to prevent sticking)

  6. Just when you think you’re done, hang on—here comes the good stuff! Let’s sprinkle in our freeze-dried Strawberries.

  7. Spread your strawberry rice krispie mixture into your lined baking dish. (Optional: Sprinkle in some whole Freeze-Dried Strawberries on top!)

  8. Gently press the mixture into your pan and let it sit for at least an hour.

  9. After the hour has finally passed, lift your parchment paper from the pan and pop ‘em onto a cutting board. Slice your treat into squares and enjoy!

P.S. DO NOT refrigerate your Rice Krispie treats. Doing so will make them extremely hard and brittle.
