Pineapple Upside Down Mimosa Recipe – A Tropical Brunch Cocktail You'll Love
Have you ever tried something at a restaurant and immediately thought, “I need to recreate this at home!” That was me after visiting The Breakfast Company in Bradenton - where I was first introduced to what’s now my absolute favorite brunch cocktail: the Pineapple Upside Down Mimosa.
If you’re a fan of tropical flavors, brunch cocktails, or simply want to try something new, this easy mimosa recipe is calling your name. It’s light, fruity, and gives total summer in a glass vibes.
Ingredients
~2 oz Pineapple Juice – Fresh is best, but store bought works great too.
1 oz Rum – I used a toasted coconut rum from Siesta Key Distillery, but any rum you have on hand will do.
1/2 oz Grenadine – Adds sweetness and that signature layered “sunset” look.
Prosecco – Top to your heart’s content. (Yes, technically it’s not a mimosa without Champagne, but I much prefer Prosecco.)
Garnish: 1 maraschino cherry per glass
Serving Size: 1 mimosa – Multiply as needed for guests or batch cocktails!
Instructions
In a champagne flute, pour in the pineapple juice, rum, and grenadine.
Top with Prosecco - the fizzier the better!
Optional: Drop a maraschino cherry into each glass for a cute pop of color.
Serve immediately and enjoy!
Pro Tips
Want a more layered look? Pour the grenadine last by slowly drizzling it down the side of the glass.
Hosting brunch? Make a large batch of the pineapple juice + rum mixture ahead of time and top with Prosecco per glass just before serving.
