No Bake Energy Bites
When the Florida heat hits, the last thing I want is to turn on the oven. That’s why I’ve been diving into the world of no-bake desserts and these no-bake energy bites are quickly becoming a favorite.
These little bites are loaded with wholesome, feel-good ingredients and come together in just minutes. No oven, no fuss, just a quick and easy recipe you can whip up anytime. I love that they’re made with pantry staples I almost always have on hand, making them a go-to for busy days.
Whether you need a healthy snack to keep you fueled or a sweet treat to satisfy a craving, these no-bake energy bites check all the boxes. Simple, delicious, and perfect for Florida living or anywhere you’d rather skip the oven.
Ingredients
¼ cup honey
½ cup + 2 tablespoons rolled oats (or 3/8 cup if measuring precisely)
¼ cup semi-sweet chocolate chips
⅓ cup diced dried dates
¼ cup hemp seeds
1 teaspoon maple cinnamon
Line a plate with parchment paper and set aside.
In a medium mixing bowl, add all of the ingredients. Use a rubber spatula to stir until a sticky dough forms (don’t worry, sticky is normal!).
Using a small cookie scoop or spoon, portion the dough and roll it into bite-sized balls. Place each ball on the lined plate, leaving space so they don’t stick together.
Transfer the plate to the refrigerator for at least 15 minutes, or until the bites are firm.
Enjoy immediately, then store any leftovers in an airtight container in the fridge to keep them fresh and firm
