Garlic Green Beans with Bacon and Feta

Dinner parties, family visits, or cozy nights in this green bean side dish fits them all. With Thanksgiving landing this week, my kitchen has basically been a test lab as I finalize the dishes I’m bringing to the holiday table. This one absolutely made the cut. It’s gorgeous on a platter, quick to pull together, and packed with flavor in every bite.

Ingredients

  • 2 cans Del Monte Cut Green Beans (with sea salt), drained and rinsed. Cans keeps things simple and easy during holiday madness, but fresh works too.

  • 3 slices bacon, cooked and crumbled

  • 2 cloves garlic, pressed or finely chopped

  • ¼ cup chopped shallots

  • ½ teaspoon dry mustard

  • 2-3 heaping tablespoons crumbled feta

  • Salt and black pepper, to taste

Instructions

  1. Cook the bacon in a skillet until crisp. Transfer it to a paper towel lined plate, keeping the bacon grease in the pan.

  2. Add the chopped shallots and garlic to the same skillet and sauté until softened. Season with salt, pepper, and the dry mustard.

  3. Drain and rinse the green beans, then add them to the skillet. Toss gently and warm through.

  4. Move the green bean mixture to a serving dish. Sprinkle with the crumbled bacon and feta, and serve right away.

  5. Optional: drizzle a little balsamic vinegar over the top for an extra flavor boost.
