Football Rice Cake Bites

Last Sunday while strolling through the aisles of Sprouts, I stumbled on Wowza Rice Cakes and the variety of flavors instantly caught my eye. One in particular made its way into my cart: Buttery Pancake. The moment I opened the bag, I was hit with the sweetest, maple syrup pancake aroma. Honestly, I could’ve eaten the whole bag right there, but with friends coming over, I decided to get creative and turn them into game day bites.

Back in college, I was “that person” known for whipping up Oreo truffles (even gave a class presentation on them sweaty palms and all). Let’s just say the samples went over way better than my actual speech. Fast-forward to today, and I’ve given those truffles a football-season twist: Wowza Football Truffles (aka Rice Cake Football Bites). Shaping and dipping them in chocolate was trickier than I expected, but trust me what they lack in looks, they more than make up for in flavor. Maple-cinnamon pancake + semi-sweet chocolate = absolute touchdown.

Ingredients

  • 1 (3.5 oz) bag Wowza Buttery Pancake Rice Crisps

  • 1.7 oz cream cheese, softened

  • 1 tablespoon maple syrup

  • 0.5 teaspoon maple cinnamon

  • ~ 1 cup semi-sweet chocolate chips

  • 1 teaspoon coconut oil (for melting chocolate)

  • Vanilla frosting (for decorating the football stitches)

Instructions

  1. In a food processor, combine the rice cakes, cream cheese, maple syrup, and maple cinnamon. Blend until a thick, creamy mixture forms.

  1. Line a baking sheet with parchment paper.

  2. Scoop out the mixture and form it into mini football shapes. Place them on the lined tray.

  3. Place in fridge for about 1 hour, or until the truffles are firm enough to handle.

  4. In a microwave-safe bowl, melt the semi-sweet chocolate chips with the coconut oil in 15-second increments, stirring between each until smooth.

  5. Using two spoons roll each football truffle into the melted chocolate, let the excess drip off, then place back onto the parchment-lined tray. Place in fridge again for 15 minutes to set.

  6. Fill a piping bag with vanilla frosting. Pipe on football stitches over the top of each truffle.

  7. Take your truffles out of the freezer and pipe on your frosting in the shape of football seams.

  8. Chill in the fridge for another 15 minutes before serving.

  9. Finally your truffles are ready to enjoy! Store them in the fridge for up to a week.
